You can whip up this one-pot pasta and skip all the extra dishes. Juicy sausage, gooey mozzarella, and tangy tomato all simmer together while your noodles cook right in the same pot. In half an hour, you’ll have a cozy family meal with barely any clean up.

On a crammed Wednesday, I figured out this trick to making a velvety sauce while cooking pasta in just one pot. Tossing in mozzarella made such a difference, the kids ask for it every week now.

Dreamy Ingredients

  • Real mozzarella: Makes everything smooth and melty
  • Great pasta: Releases starch and helps the sauce hug each bite
  • Beef broth: Adds layers of savory depth
  • Crushed tomatoes: Bring tang and perfect texture
  • Fresh garlic: Pick heavy, tight bulbs
  • Italian sausage: Pop it out of the casing for best bite

Pasta Adventure

Jump to Cheesy Finish:
Once pasta hits that just-right bite, pile in your mozzarella slowly. Pop on the lid, then let it melt so your sauce turns nice and creamy.
Pasta Gets Comfy:
Pour in your tomatoes and broth, crank the heat, then add pasta. Make sure it’s all covered in liquid. Keep an eye on things and add more broth if you need it, lowering the heat to prevent sticking.
Build Up Flavor:
Crumble and brown sausage in your hot pot until it’s golden, then drain the fat but keep all those tasty bits at the bottom for flavor.
Sauce Starts Here:
Spoon in tomato paste with minced garlic and sauté till you can really smell everything. Throw in your dried spices bit by bit and let them wake up.

Pasta lets off plenty of starch as it cooks in the pot. That’s what thickens the sauce and makes it cling to the noodles, so every bite turns out rich and tasty.

Make It A Feast

Pair your pasta with a bright Caesar salad and crusty garlic bread. Toss a handful of shredded Parmesan and some fresh basil on top before digging in. If you like a kick, pass some extra chili flakes.

Switch Things Up Your Way

Use spicy sausage if you want heat or swap in different shapes for your noodles. Stir in mushrooms, spinach, or even peppers for more veggies. For a lighter dish, hold the mozzarella. Add more for a super creamy version.

Easy Storage Guide

Seal up any leftovers in a tight container for up to three days. Warm it gently on your stove with a little splash of broth to loosen things up. It’s best eaten within a couple days for primo texture and taste.

Ingredients You’ll Need

→ Main

01 1 cup mozzarella, shredded
02 8 ounces uncooked spaghetti noodles
03 16 ounces Italian sausage links

→ Sauce Base

04 Crushed red pepper flakes, add as much or as little as you want
05 3 cups beef broth
06 1 teaspoon sugar
07 3-4 cloves garlic, smashed or minced
08 2 tablespoons tomato paste
09 1 can (15 oz) crushed tomatoes
10 1 teaspoon onion powder
11 Half a teaspoon dried oregano

→ For Serving

12 Salt and pepper, your call
13 Parmesan, freshly grated
14 A handful of parsley or basil, chopped up

Steps to Make It

Step 01

Soon as the cheese melts after tossing, scoop into bowls and pile on your favorite toppings. Let the mozzarella get gooey with the lid on for 5 minutes first. Kill the heat before this step.

Step 02

Tumble in your uncooked spaghetti once the sauce bubbles. Let it cook uncovered for about 12 minutes and give it a stir now and then so nothing sticks.

Step 03

Throw in tomato paste and garlic, let them sizzle for a minute. Next toss in your beef broth, canned tomatoes, and all those spices. Get everything stirred up.

Step 04

Crank up the heat to medium-high. Cook the sausage about 8-10 minutes, bust it up while you go. Pour off the extra grease when it’s brown enough.

Extra Information

  1. Feel free to add extra liquid anytime it looks dry
  2. Go with ground sausage or just take it out of the casing
  3. You’ll end up with plenty of saucy goodness
