Take your pot off the stove. Stir in the salt and sugar. Spoon the porridge into bowls, load it up with cinnamon, and top with nuts or dried fruits if you’re into that.

Keep everything moving with a spoon while it cooks for 5–7 minutes on low, until it thickens up nicely. It'll get a bit firmer as it cools.

Turn the heat down a bit. Grab a whisk and slowly shake in the semolina while you keep stirring nonstop so you don’t get any lumps.

Put the milk in a medium pot with a heavy bottom and heat it gently over medium, watching for tiny bubbles at the edge. If you feel like it, add vanilla extract or the scrapes from a pod now.
