Easy Salmon Feta Tomato Pasta (Print Version)

01 - 1 salmon fillet
02 - 1 cup feta cheese
03 - 1 ½ cups cherry tomatoes
04 - 1 teaspoon salt
05 - ½ teaspoon fresh black pepper
06 - 1 teaspoon garlic powder
07 - 1 teaspoon smoked paprika
08 - 3 tablespoons olive oil
09 - 2 tablespoons fresh parsley, chopped
10 - 250 g penne pasta, cooked al dente

# Instructions:

01 - Preheat your oven to 200°C (400°F). In a small greased baking dish, add the salmon, feta, and cherry tomatoes. Drizzle with olive oil and season with salt and pepper. Bake for 15–20 minutes or until the salmon flakes easily and the tomatoes are bursting.
02 - Using a fork or potato masher, mash the salmon, feta, and tomatoes together in the baking dish. Stir in garlic powder, smoked paprika, olive oil, and parsley until the mixture is creamy and well combined.
03 - Add the cooked penne pasta to the creamy mixture and toss until evenly coated. Adjust seasoning with salt and pepper as needed. Add extra olive oil, if desired.
04 - Plate the pasta mixture and garnish with additional parsley, if desired. Serve immediately.
