Pop the cottage cheese into a blender or processor and blitz it until it’s creamy with no lumps.

In a saucepan, combine the smooth cottage cheese, cheddar, and milk over medium heat. Stir constantly until it’s silky and combined.

Stir in chilies, cumin, garlic powder, onion powder, salt, and some pepper. Make sure everything is mixed well.
