01 - 4 boneless, skinless chicken breast halves, 4 ounces each
02 - 1/2 pound fresh sliced mushrooms
03 - 1 1/2 cups fresh baby carrots
04 - 1 cup pearl onions
05 - 1/2 cup julienned sweet red pepper
06 - 1/4 teaspoon black pepper
07 - 3 teaspoons minced fresh thyme
08 - 1/2 teaspoon salt (optional)
09 - Lemon wedges (optional)

# Steps to Make It:

01 - Preheat oven to 375°F. Flatten chicken breasts to 1/2-inch thickness and place each on a piece of heavy-duty foil, about 12 inches square. Layer the mushrooms, carrots, onions, and red pepper over the chicken. Sprinkle with black pepper, thyme, and salt if desired.
02 - Fold the foil around the chicken and vegetables, sealing tightly. Place the foil pouches on a baking sheet. Bake for about 20 minutes, or until the chicken juices run clear.
