Chicken Chipotle Wrap (Printable Recipe Version)

Juicy chicken, chipotle mayo, and crunchy veggies wrapped up in a soft tortilla. Totally delicious.

# Ingredients You’ll Need:

→ Chipotle Mayo

01 - Black pepper to taste
02 - Salt to your liking
03 - 1 tablespoon lime juice
04 - 2 tablespoons chipotle peppers in adobo, finely chopped
05 - 240 ml mayo

→ Grilled Chicken

06 - 3 garlic cloves, minced
07 - 2 tablespoons lime juice
08 - 1 teaspoon oregano (dried)
09 - 2 teaspoons smoked paprika
10 - 1 teaspoon onion powder
11 - 2 teaspoons garlic powder
12 - 2 teaspoons olive oil
13 - 450 g chicken breast or chicken breast fillets

→ Wrap Stuffing

14 - 200 g cheddar and pepper jack cheese, shredded
15 - 75 g red onion, diced
16 - 180 g tomatoes, diced
17 - 200 g iceberg lettuce, thinly sliced
18 - 4 wheat tortillas (about 25 cm wide)

# Steps to Make It:

01 - Cut those wraps down the middle and dig in right away.
02 - Put a tortilla on your board. Pile on lettuce, tomatoes, onion, cheese, and the hot chicken. Drizzle some chipotle mayo over it, fold the sides in, then roll it up nice and tight.
03 - Crank up your grill pan or grill over medium-high. Oil it if you want. Grill chicken 3 to 4 minutes per side until it hits 74°C inside. Let it rest for a bit, then slice it up small.
04 - If your chicken's super thick, slice it in half so it’s about 1.5 cm thick. Toss it in a bowl with olive oil, garlic powder, onion powder, smoked paprika, oregano, fresh garlic, and lime juice. Make sure it's all coated. If you want big flavor, let it chill in the fridge for a few hours or overnight.
05 - Mix mayo, chopped chipotle in adobo, lime juice, plus some salt and pepper till it’s all blended. Keep it cold and covered until you need it.
