Chocolate Fudge Cookies (Print Version)

# Ingredients:

01 - 1/2 cup creamy peanut butter.
02 - 1/4 cup room-temperature butter.
03 - 1/4 cup shortening (like Crisco).
04 - 1/2 cup granulated sugar.
05 - 1/2 cup tightly packed brown sugar.
06 - 2 big eggs.
07 - 1/2 teaspoon vanilla flavor.
08 - 1 1/2 cups plain all-purpose flour.
09 - 1 teaspoon baking soda.
10 - 1/4 teaspoon table salt.
11 - 1/4 cup granulated sugar for rolling.
12 - 1/4 cup butter for the frosting.
13 - 1 1/2 tablespoons of cocoa powder.
14 - 3 tablespoons milk.
15 - 2 cups powdered (confectioners') sugar.
16 - 1 teaspoon vanilla extract (for frosting).

# Instructions:

01 - Whip the peanut butter, butter, shortening, and sugars together until nice and fluffy (about 2 minutes). Add eggs one at a time, then toss in vanilla.
02 - In another mixing bowl, combine salt, soda, and flour. Gently blend into the wet bowl until it just comes together. Don't stir too much.
03 - Preheat oven to 375°F. Make tiny dough balls (about 1/2 inch wide), roll them in sugar, and set them on a baking pan with no grease. Bake for 6-8 minutes—don’t let them get brown.
04 - Keep cookies on the baking sheet for a couple of minutes, then transfer to a rack to finish cooling.
05 - Boil together cocoa, butter, and milk. Take off the heat, then beat in powdered sugar and vanilla until smooth and creamy.
06 - Spread warm frosting between two cookies. Press gently to make a sandwich.

# Notes:

01 - Pull cookies out early so they stay soft enough for sandwiches.
02 - Use frosting while it's still warm to spread it more easily.
