Put the water, oil, sugar, and salt into a medium pot. Heat it on medium-high until it starts bubbling.

Take the pot off the heat and quickly stir in the flour. Keep mixing until smooth and let it sit for 10 minutes to cool off.

Pour 8 cups of frying oil into a deep pan and heat it to 375°F (190°C).

Scoop the dough into a piping bag with a star-shaped nozzle.

Pipe long strips of dough into the hot oil. Cook each side for about 2 minutes until crispy and golden. Lay them on paper towels to soak up the oil.

Stir cinnamon and sugar in a flat bowl. Roll your fried churros around until they’re fully covered.
