Creamy Chicken Gnocchi (Print Version)

# Ingredients:

01 - 3-4 cooked, diced chicken breasts without bones or skin
02 - 1 chopped celery stalk
03 - 1/2 onion, finely chopped
04 - 2 teaspoons garlic, minced
05 - 1/2 cup carrots, shredded
06 - 1 cup spinach leaves, roughly torn

→ Pantry & Dairy

07 - 1 tablespoon of olive oil
08 - 4 cups chicken broth, low in sodium
09 - 16 ounces of gnocchi made from potatoes
10 - 2 cups of half-and-half cream

→ Seasonings

11 - Thyme, 1 teaspoon
12 - A pinch of salt and black pepper, adjust as needed

# Instructions:

01 - Pour olive oil into a big pot and warm it over medium. Toss in chopped celery, diced onion, garlic, and carrots. Stir for 2-3 minutes till the onions go soft and clear.
02 - Mix in chicken, broth, thyme, salt, and pepper. Let it boil, then add in the gnocchi gently. Keep it boiling for another 3-4 minutes, then turn the heat down, and let it simmer for about 10 minutes.
03 - Add spinach and half-and-half to the pot. Cook for 1-2 minutes until spinach softens. Taste and adjust seasoning if needed. Dish it out and enjoy.
