This hearty Bubble Up Pizza Bake is my secret for the coziest pizza night ever. Imagine your favorite pizza flavors packed into fluffy oven rolls. It's easy to swap in whatever toppings you love. No matter if you're curled up solo or sharing with a crowd, every bite brings pure pizza joy.

My family can't get enough of this pizza-meets-casserole week after week. We love it loaded up with colorful toppings. Bubble Up Pizza Bake is our go-to for lazy nights and busy weekends.

Easy Ingredients

  • Refrigerated roll dough: makes the light but sturdy base, grab fresh tubes from the store so the bottom stays fluffy
  • Pizza sauce: grab a jar or make it quick at home, those sweet tomato flavors set the tone
  • Mozzarella: creamy cheese pulls for days, fresh-grated works best for a punchier taste
  • Italian sausage: adds spice and fits classic pizza style perfectly
  • Pepperoni: these spicy slices kick up the flavor, just pick some that aren't too greasy
  • Black olives: bring a bit of bitterness, go for extra tasty ones if you can find them
  • Green bell pepper: crunchy and bright, make sure it's extra fresh and firm
  • Shredded parmesan: creates that magic cheesy finish, it tastes extra bold if you grate it yourself

Step-by-step guide

Prepping the oven and pan:
Heat your oven up to 400°F and grab a baking dish. Grease it really well so nothing sticks.
Cooking the sausage:
Throw your sausage into a nonstick pan and fry on medium-high for around ten minutes. Break it up with a spoon until it's nice and brown, then drain it on kitchen paper.
Getting the dough ready:
Pull your dough out of the fridge, slice each roll into quarters, and line the pan with those dough pieces.
First bake:
Pop the dough into the oven for ten to twelve minutes until it starts browning. This keeps the crust firm, so it won't turn out soggy.
Build your toppings:
Spoon pizza sauce all over the pre-baked dough. Sprinkle half the mozzarella, then layer on sausage, pepperoni, olives, and bell pepper. Finish with the rest of the cheese on top.
Bake it up:
Back in the oven for fifteen to twenty minutes. Watch for the cheese to bubble up and turn golden, and for everything to get nice and hot.
Finishing touches and serving:
Take your pizza bake out and shower it with fresh parmesan. Let it cool a few before serving up.

Good to know

Packed with protein, keeps you full for ages
Awesome for parties and big crowds
Kids love it too since you can tweak the toppings for anyone
We're obsessed with fresh-grated mozzarella—the flavor is wild and the cheese gets super stringy. Bubble Up Pizza Bake always reminds me of winter nights with friends, everyone gathering around and piling on their topping favorites.

Keeping leftovers fresh

Cover and stash any leftovers in the fridge for up to two days. Warm them back up in the oven on low or in the microwave—they won't dry out. Plus, freezing extras works great and tastes just as good later.

Swap these out

No sausage on hand? Use cooked ham or vegetarian links. Not a fan of bell pepper? Toss in corn, grape tomatoes, or some sautéed mushrooms instead. Try shredded gouda or emmental for the cheese if you'd like.

Ways to serve

Lift out a big piece and pair it with crisp salad. A creamy herb dip on the side makes it even better. And for kid parties, I cut it in small squares with vibrant toppings for easy snacking.
