Turn your oven to 400°F and let it heat up. Put some butter on your muffin tin to keep things from sticking. Squash cinnamon rolls into each cup and make little pockets for the filling.

Combine the diced apples, brown sugar, cinnamon, lemon juice, melted butter, and the cornstarch mixture. Microwave it until the apples soften up and it thickens.

Stir together the butter, flour, brown sugar, and cinnamon until everything clumps into crumbs.

Spoon the cooked apple mixture (strain out the extra liquid first) into the cinnamon roll pockets. Sprinkle the crumbly streusel on top.

Mix the butter, powdered sugar, milk, cinnamon, and vanilla in a bowl until it's smooth.
