White Chocolate Raspberry (Print Version)

# Ingredients:

→ Cake Base

01 - 1 tsp pure almond extract
02 - 2 tsp pure vanilla extract
03 - 1/2 cup vegetable oil
04 - 1 1/4 cups milk or buttermilk, room temperature
05 - 6 egg whites, at room temp
06 - 1/2 cup sour cream, at room temp
07 - 2 cups granulated sugar
08 - 1 cup softened, unsalted butter
09 - 1 teaspoon salt
10 - 1 Tbsp baking powder
11 - 2 3/4 cups plain all-purpose flour

→ White Chocolate Ganache

12 - White gel food coloring (optional)
13 - 1 cup white chocolate chips
14 - 1/3 cup heavy cream

→ White Chocolate Mousse

15 - 1 1/2 tsp pure vanilla extract
16 - 4 Tbsp powdered sugar
17 - 1 3/4 cup heavy cream, cold
18 - 3 oz finely chopped white chocolate

→ Toppings

19 - Fresh raspberries
20 - White chocolate curls
21 - Homemade raspberry sauce

# Instructions:

01 - Whip up raspberry sauce early to let it set. Turn on the oven to 350°F. Coat your cake tin (9x13 inch) with butter or spray.
02 - Use a sifter to work through the flour, baking powder, and salt. Give it a quick stir for good measure.
03 - First make the butter creamy by beating it. Follow that by blending in sugar until it’s airy. Add sour cream, one egg white at a time, while beating.
04 - Stir together oil, vanilla, almond extract, and milk. Gradually mix these into the butter, alternating with the dry ingredients until smooth.
05 - Pour the batter evenly into your pan. Cook for 30-35 minutes until a toothpick pushed in the middle comes out dry. Let the cake cool down totally.
06 - Heat white chocolate chips and cream in short intervals in the microwave. Stir until silky. Add gel color for fun if you like.
07 - Melt the white chocolate gently with some cream. Whip the rest of the cream with sugar and vanilla, then carefully fold the cooled chocolate in.
08 - Poke holes all over the cake’s surface. Layer in raspberry sauce and ganache in alternating stripes. Spread mousse on top, drizzle more sauce and ganache, and sprinkle raspberries and curls of chocolate.
