Turkey Sweet Potato (Printable Recipe Version)

Ground turkey, sweet potatoes, and veggies come together in one pan for a simple and healthy meal.

# Ingredients You’ll Need:

→ Key components

01 - 1 bell pepper, diced into pieces (any color you like)
02 - 2 medium-sized sweet potatoes, peeled and cut into cubes
03 - 1 tablespoon of avocado or olive oil, whichever you like more
04 - 1 whole yellow onion, chopped finely
05 - 1 pound of ground turkey
06 - 2 garlic cloves, either minced or crushed

→ Spices

07 - 1 teaspoon of ground cumin
08 - Salt and freshly cracked black pepper, adjust to your liking
09 - 1 teaspoon of smoked paprika

→ Toppings

10 - Fresh parsley, chopped, to top things off
11 - 2 cups of spinach, roughly chopped up

# Steps to Make It:

01 - Warm up your olive oil in a big pan over medium heat. Toss in the chopped onions and garlic, cooking them for 2-3 minutes until they smell awesome and look soft and shiny.
02 - Throw the diced sweet potatoes into the pan. Stir them off and on for about 10 minutes until they begin to soften but don’t get mushy yet.
03 - Slide the sweet potatoes over to one side of the skillet. Add the ground turkey to the empty spot and break it apart with a wooden spoon. Let it cook for 5-7 minutes until it’s browned and there’s no pink left.
04 - Sprinkle the cumin, smoked paprika, salt, and pepper evenly over the pan. Mix everything so the flavors coat the ingredients well.
05 - Add the spinach and bell pepper to the skillet. Cook for 3-4 minutes, stirring occasionally until the spinach softens and the bell pepper gets tender. Turn off the heat and sprinkle with parsley before eating.

# Extra Information:

01 - A great option for meal prep - it keeps well in the fridge for around 4 days.
02 - Swap out the ground turkey for beef, chicken, or even plant-based choices if you feel like it.
03 - Toss in extras like mushrooms, zucchini, or cherry tomatoes to boost taste and nutrition.
