Take the skillet out of the oven with the turkey in it. Let it sit for about 10 minutes, then cut into slices and serve.

In a cast iron or any oven-safe pan, heat the rest of the olive oil on medium-high. Sear each turkey fillet for 3–4 minutes per side until they're golden.

Turn your oven up to 200°C with top and bottom heat.

Pop the turkey fillets into the bowl, coat them really well in the marinade. Cover and chill in the fridge for at least 30 minutes, or if you're not in a hurry, overnight.

In a big bowl, blend apple cider vinegar, brown sugar, Dijon, garlic, thyme, rosemary, salt, pepper, and 2 tablespoons of olive oil until smooth.
