Tortellini with Sausage (Print Version)

# Ingredients:

→ Protein

01 - 3 garlic cloves, finely chopped
02 - 11 oz crumbled Italian sausage

→ Sauce

03 - 1/2 cup rich cream
04 - 14 oz canned diced tomatoes with their juices
05 - 1/4 cup chicken stock

→ Pasta & Vegetables

06 - Freshly grated parmesan (optional)
07 - Season with a pinch of salt and pepper
08 - 2 cups raw baby spinach
09 - 9 oz pack of fresh cheese-filled tortellini

# Instructions:

01 - Heat a large pan and brown the sausage crumbles, stirring often. Get rid of extra fat if there's too much.
02 - Mix in the garlic, chicken stock, diced tomatoes, cream, and tortellini. Let it simmer uncovered for 5-7 minutes until the tortellini is cooked.
03 - Toss in the spinach and cook until it softens. Sprinkle salt and pepper to taste. Add parmesan on top if you'd like.

01 - You can pick any type of Italian sausage.
02 - Using heavy cream keeps the sauce smooth.
03 - Starch from the pasta helps naturally thicken the sauce.
