Chili Cheese Burrito (Printable Recipe Version)

Savory burrito packed with beef, beans, and cheese just like Taco Bell — super simple and loaded with flavor.

# Ingredients You’ll Need:

→ For serving and stuffing

01 - Sour cream if you want
02 - Salsa, as much as you'd like
03 - 10 wheat tortillas (about 25 cm across)
04 - 300 g cheddar cheese, shredded

→ Filling

05 - 170 g tomato paste (around 6 tablespoons)
06 - 450 g canned kidney beans, drained
07 - 2 tablespoons cornstarch
08 - 480 ml water, keep 30 ml separate
09 - 1 teaspoon salt
10 - 1 teaspoon cayenne
11 - 3 tablespoons chili powder
12 - 1 medium yellow onion, chopped
13 - 500 g ground beef

# Steps to Make It:

01 - Top your burritos with salsa and maybe some sour cream if that’s your thing.
02 - Put a tortilla on your board. Nuke the tortillas for about 15 seconds if they need to be softer. Sprinkle some cheese in the lower middle, then drop 1/4 to 1/2 cup of filling on top. Fold the sides, roll up nice and tight.
03 - Take 150 g of cheddar, mix it right into the filling, and let it melt as you stir.
04 - Stir in the beans and tomato paste until everything comes together.
05 - Mix the cornstarch with that extra 30 ml of water until smooth. Stir this into the pan. Let it bubble and cook a bit until it gets thicker.
06 - Sprinkle in chili powder, cayenne, and salt. Mix well, then add 450 ml water. Stir again so it’s all combined.
07 - Put a big pan over medium. Toss in ground beef and diced onion. Cook while breaking up the meat, until everything is browned. Pour off any fat.

01 - If you briefly microwave the tortillas, rolling them will be way easier.
