Spinach Apple Salad with Almonds (Print Version)

# Ingredients:

01 - 4 oz baby spinach leaves
02 - 4 oz spring mix lettuces
03 - 1 cup raisins
04 - ¾ cup sliced almonds, toasted
05 - 3 granny smith apples, very thinly sliced (approximately 40 slices per apple)
06 - 2 tablespoons fresh Italian parsley

→ Honey Cider Dressing Ingredients

07 - 3 tablespoons apple cider vinegar
08 - 3 tablespoons honey
09 - ⅓ cup mayonnaise
10 - 1 tablespoon dijon mustard
11 - 1½ tablespoons yellow onion, finely minced
12 - 1½ tablespoons fresh Italian parsley, chopped
13 - ½ cup light flavor olive oil
14 - ½ teaspoon kosher salt (adjust to taste)

# Instructions:

01 - Warm the honey and apple cider vinegar in a small glass bowl using a microwave. Stir until the honey dissolves completely. In an electric blender, combine the mayonnaise, Dijon mustard, finely minced onion, chopped parsley, olive oil, and kosher salt. Add the honey mixture and blend until smooth. Taste and adjust salt as desired. Store in the refrigerator until ready to use.
02 - Using a skillet over medium heat, toast the sliced almonds until aromatic and golden. Optionally, caramelize the almonds for additional flavor. Remove from heat and let cool.
03 - In a large bowl or on a serving platter, combine the baby spinach, spring mix lettuces, raisins, toasted almonds, and sliced apples. Sprinkle with fresh parsley.
04 - Lightly drizzle half of the prepared honey cider dressing over the salad just before serving. Store remaining dressing in the refrigerator for future use.

01 - For best results, slice the apples as thinly as possible to evenly distribute their flavor throughout the salad.
