Run the wings under cool water and then pat them dry with a paper towel. Dry wings crisp up much better. Toss them in a big bowl with the salt, black pepper, smoked paprika, and garlic powder so they’re evenly coated.

Heat your oven to 400°F (200°C). Lay the wings out on a wire rack resting over a foil-lined baking pan. Bake for 40 to 45 minutes, turning them over halfway through, until the skin turns crispy and golden.

Warm some oil in a sturdy pot or deep fryer to 375°F (190°C). Fry the wings in small groups for about 8-10 minutes until they’re crispy and cooked through. Let them rest on paper towels to drain excess oil.

Add honey, brown sugar, hot sauce, soy sauce, apple cider vinegar, and cayenne pepper into a little pot. Stir it over medium heat. Once it starts bubbling and thickening slightly (around 3-5 minutes), it’s good to go!

Put the cooked wings into a big bowl. Pour the sweet and spicy sauce over them. Give it all a good mix so they’re evenly covered in the glaze.
