Put eggs in a pot with cold water. Heat until boiling, cover, then take it off the burner. Leave them to sit for 12 minutes.

Transfer the eggs into a bowl of icy water to cool down fully. Peel the shells when they’re easy to remove.

Slice the eggs in half lengthwise. Scoop yolks into a mixing bowl, then arrange the whites on a serving plate.

Combine yolks with mayo, celery, peppers, mustard, cajun spices, and onion powder. Mash it all together until smooth.

Use a spoon or a piping bag to fill the whites with the yolk mixture. Sprinkle extra spices and green onions on top if you like.
