Fresh Southwestern Chicken (Printable Recipe Version)

# Ingredients You’ll Need:

→ Chicken Fixings

01 - 1 tablespoon lime juice
02 - 1/4 teaspoon chili flakes
03 - 1/2 teaspoon ground cumin
04 - 1 teaspoon brown sugar
05 - 1 teaspoon salt
06 - 1/2 teaspoon garlic powder
07 - 1/2 teaspoon onion powder
08 - 1 teaspoon smoked paprika
09 - 2 tablespoons olive oil
10 - 2 boneless skinless chicken breasts, around 700g, each about half an inch thick

→ Chipotle Ranch Sauce Stuff

11 - 1/2 teaspoon smoked paprika
12 - 1/4 cup milk
13 - 2 tablespoons ranch seasoning
14 - 2 tablespoons lime juice
15 - 1 chipotle chili in adobo, finely chopped
16 - 1 cup mayonnaise

17 - 1 cup tortilla strips
18 - 1 avocado
19 - 180g cherry tomatoes, halved
20 - 1 small yellow bell pepper, diced
21 - 180g shredded Pepper Jack cheese
22 - 1/4 bunch fresh cilantro, chopped
23 - 1/2 red onion, thinly sliced
24 - 180g corn, thawed or fresh
25 - 1 can black beans (about 425g), rinsed and drained
26 - 4 cups chopped romaine lettuce

# Steps to Make It:

01 - Grab a big bowl and pile in the romaine, black beans, corn, red onions, cilantro, cheese, bell pepper, tomatoes, avocado, and tortilla strips. Layer on the chicken slices and put the sauce on the side.
02 - Cut the grilled chicken into thin strips.
03 - Mix together mayo, chipotle chili, lime juice, ranch mix, milk, and smoked paprika in a bowl until smooth and blended.
04 - Warm up your grill to medium-high. Lay the chicken on it, cook about 3–4 minutes each side till the inside hits 74 C. Let it chill for a few before slicing.
05 - Put the chicken filets in a bowl, add the olive oil and all the spice mix, then toss till every bit's coated.
06 - Stir all spices together in a small bowl.
