# Ingredients You’ll Need:

→ Main Ingredients

01 - Quarter-inch sausage slices with a smoky flavor (1 pound)
02 - Bite-sized red potato chunks, cut to 1-inch pieces (2 pounds)
03 - Thinly sliced large onion, perfect for caramelizing goodness
04 - Thin strips of sweet red bell pepper
05 - Two fresh garlic cloves, chopped extra fine

→ Seasonings & Oil

06 - Cooking oil like avocado oil (1/4 cup)
07 - Earthy dried thyme leaves (1 teaspoon)
08 - Warm and vibrant paprika spice (1 teaspoon)
09 - Coarse sea salt (1 teaspoon)
10 - Black pepper, ground fresh (1/4 teaspoon)
11 - Chopped fresh rosemary (1 tablespoon or 1 1/2 teaspoons dried)
12 - Parsley leaves freshly cut for a final pop of color

# Steps to Make It:

01 - Heat up half the avocado oil in a big pan until it's hot and shimmering. Toss in the sausage slices and cook for 4-5 minutes, flipping them occasionally to create a golden, crispy outside. Remove them from the pan and set aside.
02 - Add the rest of the oil into your skillet and throw in the potato pieces. Let them cook and crisp up for around 5-7 minutes, stirring every now and then to keep them from sticking.
03 - Stir in the sliced onions and strips of red bell peppers. Let them cook with the potatoes for another 5-7 minutes, giving it a stir every so often for even cooking.
04 - Mix in the finely minced garlic, thyme, paprika, salt, and pepper. Give it a good stir to coat everything evenly, then add the browned sausage back into the pan.
05 - Turn down the heat and let everything cook for an extra 5-7 minutes, just until the potatoes are soft inside and have crispy edges. Sprinkle over the rosemary and gently mix to let the aroma come out. For a little extra cheer, add some parsley on top.
