Egg Bites with Cheese (Printable Recipe Version)

Moist egg muffins loaded with cottage cheese, super soft and full of protein. Great for quick mornings or snacking on the move.

# Ingredients You’ll Need:

→ Main Stuff

01 - 60 g shredded cheese like mozzarella or cheddar
02 - 1/4 teaspoon freshly ground black pepper or more if you like
03 - 8 to 10 large eggs
04 - 1/2 teaspoon fine sea salt, add more if you want
05 - 250 g cottage cheese (the chunky kind)

→ Optional Adds

06 - 60-120 g toppings you want, like diced ham, bell peppers, or green onions

# Steps to Make It:

01 - Let the egg bites rest for 5 minutes in the tin, then gently pop them out. They're good warm or just sitting out at room temp.
02 - Put them in the middle of the oven and bake for 22-25 minutes. You want the tops and centers to set. Or pop them in the air fryer at 150°C for about 12-14 minutes. Cover with parchment or foil if they brown too much.
03 - Toss in whatever fillings you like plus the grated cheese into your muffin tin cups. Pour the egg mixture in but fill only about three-quarters of the way up.
04 - Grab a blender and mix eggs, cottage cheese, salt, and pepper. Let it run till everything's smooth and a bit frothy.
05 - Turn your oven on to 165°C. Spray a nonstick muffin pan, but skip this step if you have silicone ones.

# Extra Information:

01 - Switch up the flavor with stuff like spinach, tomatoes, bacon, or any herbs you like. Any leftovers? Stick them in an airtight container and they'll keep in the fridge for up to 4 days.
