Pulled Chicken Mexican (Printable Recipe Version)

Juicy and spiced shredded chicken cooked in broth. Works wonderfully in burritos, rice bowls, salads, or tacos.

# Ingredients You’ll Need:

01 - 1/2 teaspoon ground black pepper.
02 - 2 teaspoons of chili powder.
03 - 1 teaspoon each of garlic and onion powders.
04 - 1/2 teaspoon ground cumin.
05 - 1 1/2 teaspoons of salt.
06 - 1/2 teaspoon oregano (dried).
07 - 1/2 teaspoon smoked paprika.
08 - 1 tablespoon olive oil.
09 - 1 cup chicken stock.
10 - 2 pounds of boneless, skinless chicken thighs or breasts.

# Steps to Make It:

01 - Stir together all the seasonings in a small dish so they're ready to use on the chicken.
02 - Sprinkle the spice mix on both sides of the chicken and rub it in evenly.
03 - Heat some oil in the skillet and cook each side of the chicken for 2-3 minutes to get a good color.
04 - Pour in chicken broth, put the lid on, and let it gently simmer for 15-20 minutes, or until the inside reaches 165°F.
05 - Pull the cooked chicken apart using forks. Toss it back into the pan with the juices for some added flavor.
