Soft Pistachio Cookies (Print Version)

# Ingredients:

01 - 1 large egg.
02 - 1 teaspoon vanilla extract.
03 - 1 2/3 cups of regular flour.
04 - 1/2 teaspoon of fine salt.
05 - 3/4 cup butter, softened at room temp.
06 - 3.4 oz pistachio instant pudding mix.
07 - 3/4 cup white sugar.
08 - 1/4 cup of light brown sugar.
09 - 1 teaspoon baking soda.
10 - 1 drop of optional green food dye.
11 - 1 cup of white chocolate chips.
12 - 1/2 cup pistachios, roughly chopped.

# Instructions:

01 - Get the oven going at 350°F and lay down parchment paper on cookie trays.
02 - Stir together the flour, pistachio powder mix, baking soda, and salt until blended.
03 - Whip up butter with both sugars till they’re nice and airy.
04 - Blend in the egg, vanilla, and the optional coloring.
05 - Slowly mix the dry blend with the butter mixture just until it’s holding together.
06 - Stir in pistachios and white chocolate chips.
07 - Scoop out about 1.5-2 tablespoons of dough for each cookie onto your sheet.
08 - Pop them in for 10-12 minutes till the edges look golden brown.

# Notes:

01 - Keep in a sealed container for around 5 days.
02 - Freeze for as long as 3 months if needed.
