Pink Cake Cookies (Print Version)

# Ingredients:

→ Main Ingredients

01 - ½ teaspoon vanilla extract
02 - 2 eggs
03 - ⅓ cup butter, melted
04 - 1½ cup white chocolate chips (save some extra for garnish)
05 - ½ teaspoon of baking powder
06 - 15.25 oz box of strawberry-flavored cake mix

# Instructions:

01 - Set your oven to 350°F. While it heats up, grab a cookie sheet, line it with parchment, and keep it handy.
02 - Stir together the baking powder and the cake mix in a medium-sized bowl until they're fully blended.
03 - Drop in the eggs and vanilla, stirring until it starts looking like dough. Slowly add the melted butter and mix until everything is soft and sticky.
04 - Carefully mix in your white chocolate chips by hand, making sure all those tiny bits are spread out evenly in the pink dough.
05 - Roll about 1½ tablespoons of dough into a ball using your hands. Place them spaced apart on the lined cookie sheet, then bake for 8-10 minutes, just until they start to set.
06 - As soon as the cookies come out, press a few extra white chocolate chips on top of each. Let them sit on the sheet for a couple minutes before moving them to a rack to cool all the way.

# Notes:

01 - Expect soft, fluffy cookies rather than crunchy ones.
02 - If the dough sticks to your hands, just dampen them with a little water.
03 - Keep them fresh in a sealed container for up to 5 days.
