Sweet Citrus Cookies (Print Version)

# Ingredients:

01 - Zest from two oranges.
02 - 2 teaspoons of vanilla extract.
03 - 1 cup of dried cranberries, chopped fine.
04 - 2 cups of plain, all-purpose flour.
05 - 1 cup of shortening.
06 - 2 cups of powdered sugar, split in half.

# Instructions:

01 - Mix together shortening, half of the powdered sugar, the flour, vanilla, cranberries, and half the orange zest in a big bowl until it's all blended.
02 - Roll the dough into small 1-inch balls, being careful to keep the size consistent.
03 - Set the dough balls about 2 inches apart on cookie sheets that have been lined with either parchment paper or a silicone mat.
04 - Bake in the oven at 325°F for about 20-22 minutes, or until the cookies are firm.
05 - Stir the remaining powdered sugar together with the leftover orange zest in a medium-sized bowl.
06 - Right after taking the cookies out of the oven, carefully coat them in powdered sugar using two forks to handle the hot cookies.
07 - Let the cookies cool completely by transferring them to a wire rack.

# Notes:

01 - Use forks to roll the hot cookies in sugar, and let them sit for a little to help the coating stick.
02 - Put the powdered sugar into a deep pie plate to make it easier to coat the cookies.
03 - You can coat about 5-6 cookies in the sugar mixture at the same time.
