Onion Potato Cheese Bake (Printable Recipe Version)

Thin potato slices with sweet onions and Gruyère, baked until bubbly in a rich, creamy mixture.

# Ingredients You’ll Need:

→ Base Layer

01 - 2 giant sweet onions (like Walla Walla or Vidalia), sliced super thin
02 - 2 tablespoons butter to sauté your onions
03 - 2 pounds of potatoes that are starchy (Yukon Golds or Russets work great), sliced up

→ Creamy Topping

04 - 1 ½ cups of grated Gruyère cheese
05 - 1 cup of rich, heavy cream
06 - Some fresh thyme leaves pulled off the stems
07 - A sprinkle of salt and black pepper for flavor

# Steps to Make It:

01 - Set your oven to 375°F (190°C) and grab a baking dish you love. Grease it lightly with butter or spray it with cooking spray.
02 - Grab a big pan, set it on medium heat, and melt the butter. Toss in the onions, stirring every so often, and let them cook slowly for about 15-20 minutes. They'll turn soft and smell incredible.
03 - While the onions are caramelizing, thinly slice your potatoes, about the width of a coin. Mix them in a bowl with the cream, thyme leaves, plus a little salt and pepper.
04 - In your dish, lay down half the potato mix. Spread over half the sautéed onions. Repeat the layers with the rest of the potatoes and onions. Finally, sprinkle the shredded Gruyère evenly over the top.
05 - Cover the dish with foil and bake it for 45 minutes. Remove the foil and let it go for another 15-20 minutes until the top is bubbly, golden, and starting to crisp up.

# Extra Information:

01 - Want to get ahead? You can assemble everything a day before and keep it chilled until you're ready to cook.
02 - No Gruyère? Use Swiss cheese—it's a solid swap.
03 - Try to cut all your potato slices evenly thin so they bake evenly.
