French Onion Rice Bake (Print Version)

# Ingredients:

→ Main Components

01 - 2 medium yellow onions, sliced thin
02 - 2 tablespoons butter, unsalted
03 - 1 cup white rice, long-grain
04 - 1 can (10.5 ounces) French onion soup, condensed
05 - 2 cups broth, beef

→ Spices

06 - ½ teaspoon ground black pepper
07 - 1 teaspoon dried thyme leaves
08 - 1 teaspoon garlic powder

→ Cheese & Garnish

09 - Fresh parsley (optional, for topping)
10 - 1 cup shredded Gruyère or Swiss cheese

# Instructions:

01 - Warm the butter in a large pan over medium heat. Stir onions now and then as they cook into a deep golden color (takes around 25-30 minutes).
02 - Switch oven on to 350°F. Toss together raw rice, onion soup, beef broth, caramelized onions, and spices in a 9x13 pan.
03 - Wrap the dish in foil, then bake for 30 minutes. Stir it up, ditch the foil, and keep baking another 20-25 minutes. Rice should soften up nicely.
04 - Scatter the shredded cheese over it and pop it back in the oven for 5-10 minutes. The cheese should be gooey and bubbly.
05 - Let it settle for a couple minutes. Throw parsley on top if you're feeling fancy, then serve while it’s hot.

# Notes:

01 - You can splash white wine into the pan after cooking the onions for added taste.
02 - Pairs well as a vegetarian entrée or works great as a side dish.
03 - Keeps fresh in the fridge for up to three days.
