01 - 2 large eggs
02 - 1/4 cup milk
03 - 2 cups cooked fresh corn (or frozen kernels, thawed)
04 - 1/4 cup cornmeal
05 - 1/4 cup all-purpose flour
06 - 1/2 teaspoon chili powder (adjust amounts for personal taste)
07 - 1/4 teaspoon smoked paprika
08 - 1/2 teaspoon ground cumin
09 - 1/4 teaspoon salt
10 - 1/4 teaspoon garlic powder
11 - 1/2 teaspoon baking powder
12 - 1/4 teaspoon black pepper
13 - 2 tablespoons chopped fresh cilantro
14 - 1/4 cup grated cotija cheese (use Parmesan if you prefer)
15 - 2 tablespoons cooking oil (for frying)

# Instructions:

01 - Stir flour, cornmeal, cumin, chili powder, black pepper, smoked paprika, baking powder, salt, and garlic powder together in a mixing bowl.
02 - Beat the eggs, milk, and cilantro into the dry mixture until the batter is smooth. Gently fold in the grated cheese and corn.
03 - In a skillet over medium heat, add oil and let it heat up until shimmering.
04 - Scoop small spoonfuls of batter into the oil and flatten with the spoon. Let each side fry for a couple of minutes until crispy and browned.
05 - Place the cooked bites on a plate covered with paper towels to soak up extra grease. Drizzle lime juice and sprinkle with chili powder or cheese if you like.
06 - Eat them while warm! Pair with guacamole, sour cream, or your favorite salsa.

01 - To make them spicier, toss in chopped jalapeños or a little cayenne.
