Lemon Chicken Rice (Printable Recipe Version)

A simple one-pot dish pairing zesty rice, juicy chicken, veggies, chickpeas, and feta. Done in 30 minutes, it’s fresh, fast, and filling.

# Ingredients You’ll Need:

01 - 1.5 pounds of boneless, skinless chicken thighs.
02 - Divide 3 tablespoons of olive oil.
03 - Split 2 teaspoons of oregano (dried).
04 - 1 teaspoon of paprika.
05 - Halve ½ teaspoon of salt.
06 - ¼ teaspoon of crushed red pepper flakes.
07 - Cut 8 ounces of grape tomatoes in half.
08 - 5 minced garlic cloves.
09 - Chop 5 ounces of fresh spinach.
10 - 4 tablespoons of fresh lemon juice, separated.
11 - Cook 2 cups of jasmine rice beforehand.
12 - A 15-ounce can of chickpeas, drained.
13 - 6 ounces of cubed feta cheese.

# Steps to Make It:
