Hot Mozzarella Sticks (Print Version)

# Ingredients:

01 - 1 block (1 lb) of mozzarella, cut into stick shapes.
02 - 1 cup flour (regular, all-purpose).
03 - 3 eggs, beaten well.
04 - 1 cup of crunchy panko crumbs.
05 - 1 cup plain breadcrumbs.
06 - 1 teaspoon of cayenne for some heat.
07 - 1 teaspoon smoked paprika for flavor.
08 - 1/2 teaspoon garlic powder for seasoning.
09 - 1/2 teaspoon onion powder for extra taste.
10 - Salt and black pepper, as needed.
11 - Avocado oil, enough for frying.
12 - Half a cup of melted butter, unsalted.
13 - A couple tablespoons (2) of cayenne powder.
14 - Brown sugar, 2 tablespoons.
15 - Smoked paprika, 1 teaspoon (for the sauce).
16 - 1/2 teaspoon garlic powder (used for the sauce).
17 - Optional: 1/2 teaspoon chili powder.
18 - 2-3 tablespoons of your favorite hot sauce.

# Instructions:

01 - Cut mozzarella into rectangles about 3 inches long and 1/2 inch thick.
02 - Set up separate bowls with flour, whisked eggs, and crumbs mixed with seasonings.
03 - Dip into flour first, then egg, then crumbs. Repeat egg and crumbs for thicker coating.
04 - Put coated cheese sticks in freezer for 15-20 minutes to firm up.
05 - Fry in oil heated to 375°F for about 1-2 minutes until crispy and brown, then drain on a rack.
06 - Combine melted butter, spices, brown sugar, and a splash of hot sauce.
07 - Dip the fried sticks into the warm sauce and enjoy right away.

01 - Double-dipping makes them extra crispy.
02 - Freezing keeps the breading in place while frying.
