Chipotle Honey Chicken Bowl (Printable Recipe Version)

# Ingredients You’ll Need:

→ Base and Toppings

01 - 2 cups rice, cooked (brown or white, your choice)
02 - 1 avocado, sliced up
03 - 1 cup corn, kernels
04 - 1 cup halved cherry tomatoes
05 - Chopped cilantro, scattered on top

→ Sauce

06 - 1 tablespoon fresh lime juice
07 - 3 tablespoons honey
08 - 2 chipotle peppers packed in adobo
09 - 1 fresh garlic clove

→ Protein

10 - 450 grams chicken, boneless and skinless (use either thighs or breasts)

# Steps to Make It:

01 - Toss on some chopped cilantro and a little bit more lime juice if you like. Want to get wild? Top with hot sauce, a handful of shredded cheese, a spoonful of sour cream, or sliced jalapeños. Eat it while it's still hot.
02 - Spoon out the rice into bowls. Nestle chicken slices, avocado, corn, and cherry tomatoes on top of the rice.
03 - Glaze chicken with half of the chipotle blend and set it aside for at least 20 minutes. Get your pan hot on medium-high. Brown chicken on both sides until you see that golden color, then drop the heat and finish cooking. While it cooks, swipe some extra sauce over the pieces so they get shiny and super tasty. Let the chicken chill a minute and then slice it up.
04 - Toss chipotle peppers, adobo, honey, garlic, and lime juice into a blender and blitz until smooth. Give it a taste and tweak the heat or sweetness just how you like it.

01 - Let the chipotle sauce hang out for a while before you use it so the flavors mix nicely. Change up the amount of chipotle if you want things spicier or milder.
