Toss on some chopped cilantro and a little bit more lime juice if you like. Want to get wild? Top with hot sauce, a handful of shredded cheese, a spoonful of sour cream, or sliced jalapeños. Eat it while it's still hot.

Spoon out the rice into bowls. Nestle chicken slices, avocado, corn, and cherry tomatoes on top of the rice.

Glaze chicken with half of the chipotle blend and set it aside for at least 20 minutes. Get your pan hot on medium-high. Brown chicken on both sides until you see that golden color, then drop the heat and finish cooking. While it cooks, swipe some extra sauce over the pieces so they get shiny and super tasty. Let the chicken chill a minute and then slice it up.

Toss chipotle peppers, adobo, honey, garlic, and lime juice into a blender and blitz until smooth. Give it a taste and tweak the heat or sweetness just how you like it.
