In a big bowl, stir together the yeast, salt, and flour. Pour in the olive oil and warm water, mix until it’s rough, then knead for about 10 minutes until smooth.

Oil a bowl, pop the dough in, and cover the top with plastic wrap. Leave it for 1-2 hours until it’s risen to twice its size.

Grease a baking tray, stretch out the dough to fit, then press all over with your fingers to make little dimples.

Cover it again and let it sit for another 30 minutes.

Set your oven to 425°F. Drizzle olive oil over the dough, scatter on rosemary and sea salt, and bake for 20-25 minutes till it’s golden brown.
