01 -
Crank up your oven to 400°F (200°C). Set up a baking tray with a sheet of parchment so nothing sticks.
02 -
Put the halved potatoes in a big dish. Drizzle on olive oil, sprinkle salt, and grind fresh pepper. Mix until well coated, then arrange on the prepared tray with some space between each piece.
03 -
Slide the tray into the oven and roast for 25-30 minutes. Flip them once midway to make sure both sides crisp up perfectly.
04 -
While the potatoes roast, heat butter in a frying pan over medium. Add the minced garlic, stirring for a minute or two until it smells heavenly.
05 -
Stir in the heavy cream and let it simmer gently for 3 to 4 minutes. It should start to thicken and turn luscious.
06 -
Take the skillet off the stove. Add Parmesan and stir until it dissolves fully into the sauce, giving it a smooth texture.
07 -
Remove your crispy potatoes from the oven and place them in a serving bowl. Drizzle the creamy garlic sauce over the top and sprinkle a little parsley as the final touch. Serve right away while warm.
