In a medium mixing bowl, combine the egg, milk, vanilla, and butter until well blended.

Next, toss in the sugar, baking soda, and salt. Mix it up well.

Slowly add the flour, stirring until you’ve got a smooth, lump-free batter.

Carefully transfer the batter to a large plastic Ziplock bag. Let it sit for a short while.

Pour enough oil into a frying pan to make it about half an inch deep. Turn the heat to high for 2 minutes, then lower it to medium.

Drop a small dab of batter in the pan—if you see bubbles forming, your oil is ready to go. If not, let it heat up a little more.

Make a small cut in the corner of the bag, then pipe the batter into the oil in circles. Fry until golden brown underneath.

Using a metal slotted spatula, carefully flip the pieces and fry the other side till it’s golden brown.

Lay the cooked bites on paper towels to soak up extra oil. Sprinkle powdered sugar on top for sweetness.
