Fudgy Brownie Oats (Print Version)

# Ingredients:

01 - ½ cup chocolate chips, with extra for sprinkling on top
02 - ½ cup dutch-processed cocoa powder
03 - 2 big eggs
04 - 1¼ cup milk
05 - 3 tablespoons melted coconut oil or butter
06 - 2 cups old-fashioned oats
07 - 2 teaspoons real vanilla extract
08 - 1 teaspoon baking powder
09 - ⅓ cup maple syrup
10 - ¼ teaspoon salt
11 - Optional toppings: melted chocolate and some flaky sea salt

# Instructions:

01 - Turn your oven on to 350°F. Get an 8x8 pan ready by spraying it with non-stick spray or lining it with parchment paper.
02 - Stir oats, cocoa powder, baking powder, and salt in a big bowl until they're all mixed up.
03 - Dump in the milk, maple syrup, eggs, melted coconut oil, and vanilla. Mix it well until everything blends together smoothly.
04 - Carefully stir the chocolate chips into the batter. Pour it into your prepared baking dish, and toss a handful of extra chips on top.
05 - Put the pan into the oven and bake for 30-40 minutes. It’s ready when the center feels firm to the touch. Let it sit in the pan until it cools a bit before you dig in.
06 - For a fun finish, drizzle melted chocolate on top and sprinkle on some flaky salt. Sweet and salty perfection!

# Notes:

01 - Warm these up for a quick make-ahead breakfast during the week.
02 - Using dutch-processed cocoa makes the chocolate taste deeper and richer.
03 - Want a treat? Try it warm with some ice cream or yogurt over the top.
04 - Switch to plant-based milk and dairy-free chocolate chips to make it dairy-free.
