Lift out the balls with a slotted spoon onto paper towels. Serve them right away if you want.

Fry the cauliflower balls, giving them a turn every so often, for about three or four minutes. You want them crispy and brown.

Heat your oil in a deep pan to about 175C. Scoop out spoonfuls of your mix and gently drop them into the hot oil.

Now add the eggs, smashed garlic, parmesan, flour, baking powder, and chopped parsley to the cauliflower. Stir gently until it all comes together. Season with salt and pepper.

Chop up your cooked cauliflower really well using a stick blender or food processor. Dump all of it into a big bowl.
