Cheesy Egg Breakfast Quesadilla (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 flour tortillas
02 - 2 large eggs
03 - 1 cup shredded cheese (cheddar or mozzarella)
04 - 1 ripe avocado, sliced

→ Cooking Essentials

05 - 1 tablespoon butter, for cooking
06 - Salt and pepper, to taste

# Instructions:

01 - Heat your non-stick skillet over medium heat and melt a small pat of butter. Crack one egg into the hot skillet, season with a pinch of salt and pepper, and cook until the white is set but the yolk stays nice and runny. Set aside and repeat with the second egg.
02 - Using the same skillet, place one tortilla flat and sprinkle half of your shredded cheese evenly across the surface.
03 - Place your beautiful fried eggs on top of the cheese layer, then arrange the avocado slices around them.
04 - Sprinkle the remaining cheese over everything and top with the second tortilla, pressing down gently.
05 - Cook for about 2-3 minutes on each side until the tortilla turns golden brown and crispy, and all that cheese gets wonderfully melty. Flip carefully using your spatula!
06 - Slide the quesadilla onto a cutting board, slice into wedges, and serve while it's hot and the cheese is still gooey.

# Notes:

01 - This versatile quesadilla works for any meal of the day - breakfast, lunch, or a quick dinner.
02 - For extra flavor, try adding a dash of hot sauce or a sprinkle of fresh herbs before serving.
03 - If you like your eggs more well-done, simply break the yolk while cooking or flip for over-easy style.
