Heat your non-stick skillet over medium heat and melt a small pat of butter. Crack one egg into the hot skillet, season with a pinch of salt and pepper, and cook until the white is set but the yolk stays nice and runny. Set aside and repeat with the second egg.

Using the same skillet, place one tortilla flat and sprinkle half of your shredded cheese evenly across the surface.

Place your beautiful fried eggs on top of the cheese layer, then arrange the avocado slices around them.

Sprinkle the remaining cheese over everything and top with the second tortilla, pressing down gently.

Cook for about 2-3 minutes on each side until the tortilla turns golden brown and crispy, and all that cheese gets wonderfully melty. Flip carefully using your spatula!

Slide the quesadilla onto a cutting board, slice into wedges, and serve while it's hot and the cheese is still gooey.
