Fish Sauce Dip (Print Version)

# Ingredients:

01 - 1/2 cup water, at room temperature.
02 - 1/4-1/2 cup of fish sauce.
03 - Juice of 2 limes.
04 - 2-4 tablespoons of sugar.
05 - 2 garlic cloves, minced into tiny bits.
06 - 1-2 Bird's eye Thai chilis or 2 teaspoons chili sauce (optional).
07 - 1 tablespoon of finely shredded carrots (optional).

# Instructions:

01 - In a bowl, stir together water, sugar, and fish sauce. Keep at it till the sugar is fully mixed in.
02 - Toss in the garlic, lime juice, carrots, and chilis. Add more lime juice or fish sauce if needed for balance.
03 - Leave it for 10 minutes to let the flavors come together nicely.
04 - Top with green onions if you like. Goes great with grilled meat, spring rolls, or seafood.

# Notes:

01 - You can prepare it 1-2 days before.
02 - It stays good in the fridge for about 5-6 days.
03 - Freezing is not recommended.
