Crispy Italian Oven Chicken (Print Version)

# Ingredients:

01 - 2½ – 3 pounds bone-in chicken thighs
02 - 1 tablespoon olive oil
03 - 1½ teaspoons Italian seasoning
04 - ¾ teaspoon kosher salt
05 - ½ teaspoon freshly ground black pepper

# Instructions:

01 - Preheat the oven to 400°F (200°C). Line a large baking tray or half-sheet pan with foil and place all the chicken pieces on it, skin side down.
02 - Sprinkle the chicken with kosher salt, freshly ground black pepper, and Italian seasoning. Flip each piece skin side up.
03 - Drizzle a little olive oil over the skin on each piece of chicken and rub lightly to coat. Sprinkle again with salt, pepper, and spices.
04 - Bake for one hour, until most of the fat has rendered out of the chicken and the skin is golden brown and crisp.
05 - Remove from the oven and let the chicken rest for about 5 minutes before serving.
