Smooth Carrot Ginger (Print Version)

# Ingredients:

→ Base

01 - 1 medium onion, diced
02 - 2 teaspoons freshly grated ginger
03 - 1 tablespoon butter
04 - 3-4 garlic cloves, finely chopped
05 - 1 tablespoon olive oil

→ Soup

06 - Salt and pepper, to season
07 - 1/2 teaspoon Italian herb mix
08 - 1 can (13.5 oz) of coconut milk
09 - 4 cups of vegetable or chicken stock
10 - 2 pounds of carrots, peeled and sliced

# Instructions:

01 - Melt the butter with oil in a big pot. Toss in the onions and cook them gently until golden and tender, about 5-7 minutes.
02 - Add ginger, garlic, and herb seasoning. Stir and let it cook for another minute.
03 - Pour in the broth with the carrot slices. Bring it to a bubbling boil, then lower the heat and let it simmer covered for 20-25 minutes, or until carrots soften.
04 - Cool the soup a little, then blend until silky smooth. Pour it back into the pot, mix in the coconut milk, and adjust seasoning with salt and pepper.

# Notes:

01 - Adjust ginger if you prefer a milder flavor.
02 - An immersion blender works great here too.
03 - Let it cool first to avoid blender mishaps.
