Chocolate Cookie Delight (Print Version)

# Ingredients:

01 - 1/2 teaspoon kosher salt (used in filling).
02 - 1 tablespoon milk.
03 - 1/2 teaspoon baking soda.
04 - 1 teaspoon salt.
05 - 1 egg.
06 - 2 cups powdered sugar.
07 - 1 cup softened unsalted butter (cookie dough).
08 - 3/4 cup softened unsalted butter (filling).
09 - 2/3 cup cocoa powder.
10 - 3/4 cup packed dark brown sugar.
11 - 3/4 cup white sugar.
12 - 1/2 teaspoon vanilla extract.
13 - 1 2/3 cups all-purpose flour.

# Instructions:

01 - Combine butter and both sugars until fluffy, about 3-5 minutes. Stir in the egg. Add the flour, cocoa, salt, and baking soda until dough forms.
02 - Cut dough into two portions. Flatten between sheets of parchment to 1/8-inch thickness. Chill for 30-40 minutes.
03 - Use a 1 1/2-inch cutter to shape circles. Arrange 1 inch apart on lined trays. Bake at 350°F for 12-14 minutes until firm.
04 - Whip butter until creamy. Slowly mix in powdered sugar, then add milk, vanilla, and salt until fluffy.
05 - Apply filling onto the flat side of one cookie, then cover with another cookie, flat sides together.

# Notes:

01 - A hand mixer works just as well as a stand mixer.
02 - Scraps of dough can be flattened and reused.
03 - Cookies keep fresh at room temp for up to a week.
