Set your oven to 400°F (200°C) and either grease a large baking tray or line it with parchment paper.

Use a paper towel to pat the chicken dry. Mix the smoked paprika, salt, pepper, and Italian herbs in a small bowl. Rub olive oil over the chicken, then sprinkle the seasoning blend to coat it well.

Take a big bowl and mix the potato halves with olive oil, Parmesan, garlic, salt, and pepper. Toss it all together for even seasoning.

Put the seasoned chicken on one half of the lined pan. Spread out the potatoes on the other half, keeping them in one layer for even cooking.

Bake for 25-30 minutes in the hot oven, turning the potatoes halfway through. Use a thermometer to ensure the chicken hits 165°F (74°C) inside.

In the last 5 minutes, scatter more Parmesan over both the chicken and the potatoes and broil until golden.

Once out of the oven, top with the parsley. Serve immediately and enjoy your meal!
