01 - 4 chicken breasts or thighs, skinless and boneless
02 - 1 teaspoon of dried Italian herbs
03 - ½ teaspoon smoked paprika for seasoning
04 - ¼ teaspoon ground pepper
05 - ½ teaspoon salt to taste
06 - 1 tablespoon of olive oil

→ Potato Prep

07 - 1.5 pounds of baby potatoes, either red or Yukon Gold, cut into halves
08 - 3 tablespoons of extra virgin olive oil
09 - ⅓ cup Parmesan cheese, finely grated
10 - 4 garlic cloves, minced into small pieces
11 - ¼ teaspoon black pepper
12 - ½ teaspoon of salt

→ Garnish (Optional)

13 - 1 tablespoon of fresh parsley, finely chopped

# Steps to Make It:

01 - Set your oven to 400°F (200°C) and either grease a large baking tray or line it with parchment paper.
02 - Use a paper towel to pat the chicken dry. Mix the smoked paprika, salt, pepper, and Italian herbs in a small bowl. Rub olive oil over the chicken, then sprinkle the seasoning blend to coat it well.
03 - Take a big bowl and mix the potato halves with olive oil, Parmesan, garlic, salt, and pepper. Toss it all together for even seasoning.
04 - Put the seasoned chicken on one half of the lined pan. Spread out the potatoes on the other half, keeping them in one layer for even cooking.
05 - Bake for 25-30 minutes in the hot oven, turning the potatoes halfway through. Use a thermometer to ensure the chicken hits 165°F (74°C) inside.
06 - In the last 5 minutes, scatter more Parmesan over both the chicken and the potatoes and broil until golden.
07 - Once out of the oven, top with the parsley. Serve immediately and enjoy your meal!
