Effortless Stuffed Potato Cakes (Printable Recipe Version)

Crunchy outside and stuffed with gooey cheese and creamy mash inside. These are an easy way to use up leftover mashed potatoes, and so tasty.

# Ingredients You’ll Need:

→ Main Ingredients

01 - 1/4 cup chopped green onions (add if you want)
02 - 1/2 cup bacon, already cooked and crumbled (swap for veggies if you don't eat meat)
03 - 1 cup shredded cheese (cheddar, mozzarella, whatever you like)
04 - 2 cups mashed potatoes, doesn't matter if fresh or leftovers

→ Seasonings and Coatings

05 - Oil for frying things up
06 - 1 cup breadcrumbs (to make a crispy outside)
07 - Salt and pepper until it tastes good to you
08 - 1 teaspoon garlic powder

# Steps to Make It:

01 - Grab the potato cakes out of the pan, set them on paper towels so any oil drips off, then munch while they're hot.
02 - Pour some oil in a big skillet and get it hot on medium. Drop in your patties in batches. Let them cook for about 3 or 4 minutes per side, so they're crispy and brown.
03 - Scoop up the mixture, pat it into little rounds about 2–3 inches wide, roll them around in the breadcrumbs so they're covered all over.
04 - Toss mashed potatoes, cheese, bacon (or your favorite veggies), green onions, garlic powder, and a good pinch of salt and pepper into a bowl. Stir until it sticks together.
