Put a sheet of parchment or wax paper on a baking tray.

Mix together peanut butter, sugar, and corn syrup in a pot over medium heat. Stir until it's smooth and just starting to bubble.

Add vanilla to the hot mixture and stir it through.

Carefully pour the warm mix over the cornflakes. Stir gently so they're evenly coated.

Scoop spoonfuls of the coated cornflakes onto the baking tray.

Leave the cookies at room temperature until they're firm, about 30 minutes. Then dig in!
