Wipe the steak dry with paper towels, then sprinkle both sides generously with salt and pepper. Slice it into portions that will fit your pan.

Heat some oil in a big skillet over medium-high heat until it’s super hot. Lay the steak in and cook it for 2-3 minutes on each side if you want it medium-rare. Take the steak out and set it aside to relax for a bit.

Use a different skillet and set it to low heat. Toss in the butter to melt, then mix in the garlic. Keep stirring it around with a spatula so it lightly browns but doesn’t burn. When it’s done, take it off the stove and move it right into a small bowl so it doesn’t keep cooking.

Cut the steak into slices, making sure to go against the grain for tender pieces. Drizzle the garlic butter over them and toss some parsley on top. Serve while still hot.
