Most Tender Oxtail (Print Version)

# Ingredients:

01 - 1 large tomato, chopped up.
02 - 1 tablespoon of crushed garlic.
03 - 2 tablespoons of tomato paste.
04 - 1 medium red onion, chopped fine.
05 - 1 kg of oxtail meat.
06 - 1 rounded tablespoon of minced ginger.
07 - A quarter cup cilantro stems.
08 - 1 teaspoon of cumin powder.
09 - 2 tablespoons of curry seasoning mix.
10 - 2 bay leaves for flavor.
11 - 1 tablespoon of brown sugar.
12 - A tablespoon of onion powder.
13 - A tablespoon of paprika with a smoky flavor.
14 - Dried thyme (1/2 teaspoon) or 4 sprigs fresh thyme.
15 - 1 tablespoon seasoning mix with ground coriander.
16 - Salt as much as you'd like.
17 - Your choice of chili peppers to spice it up.
18 - Some oil to fry with.

# Instructions:

01 - Fry the oxtail until you get a deep brown crust, then move it to a plate.
02 - Using the same pot, fry cilantro stems, ginger, thyme, garlic, and onion until soft.
03 - Toss in tomato paste, diced tomatoes, spices, and bay leaves. Let it all cook until thick.
04 - Bring the oxtail back into the pot, pour in water or broth, and let it simmer gently for 5 hours. Top up with liquid as needed.
05 - Take out bay leaves, sprinkle with chopped cilantro, then dig in.
