Blistered Shishito Snack (Print Version)

# Ingredients:

01 - 2 tablespoons of olive oil.
02 - 2 pounds of shishito peppers.
03 - 1 teaspoon of flaky salt.
04 - 3 tablespoons of crumbled cotija cheese.
05 - 1 lemon, freshly squeezed.

# Instructions:

01 - Fire up your grill to its hottest setting.
02 - Toss the peppers in the olive oil to coat them evenly.
03 - Place peppers on the grill and leave covered for 3–4 minutes.
04 - Flip the peppers over and cook another 2–3 minutes until the skin is charred.
05 - Sprinkle the salt, squeeze the lemon juice over, and scatter the cotija cheese on top.

# Notes:

01 - They taste best when served warm.
02 - Occasionally, some peppers might surprise you with a spicy kick.
