Place the beef chuck roast into a slow cooker with a capacity of 6 quarts or more. Sprinkle it evenly with salt and black pepper. Arrange the garlic cloves on top of the roast, then layer the sliced red onion.

Pour in the Italian dressing and beer over the beef. Add the bay leaves on top.

Cover the slow cooker and cook on high for 6 hours, or on low for 8–10 hours. Avoid lifting the lid during the cooking process for the best results.

Remove the bay leaves and shred the beef using two forks. Mash the garlic with a fork and mix it into the shredded beef. Remove any excess fat and discard, then drain the grease for the final preparation.

Place the bottoms of Hawaiian slider rolls on a serving tray. Add the shredded beef on top, followed by slices of Colby Jack cheese. Melt the cheese under the broiler to your liking. Cover with the top halves of the slider rolls and serve.
