Ground Beef Tostadas (Print Version)

# Ingredients:

→ Base and Protein

01 - 1 pound ground beef, lean
02 - 8 crispy tostada shells or corn tortillas
03 - 1 can (16 oz) refried beans

→ Seasonings and Aromatics

04 - 1/4 cup salsa, plus extras to serve
05 - 1/2 onion, finely chopped
06 - 2 tablespoons oil for cooking
07 - 2 garlic cloves, minced
08 - 2 tablespoons premade taco seasoning

→ Toppings

09 - Diced tomato, using 1 whole tomato
10 - 1 avocado, cubed
11 - 2 cups lettuce, shredded
12 - 1/2 cup cheddar, grated
13 - Cilantro and sour cream for garnish

# Instructions:

01 - To make fresh tostada shells, preheat your oven to 400°F. Lay tortillas straight on the rack and bake until crunchy, around 8-10 minutes. Let them cool down afterward.
02 - Heat up oil in a big skillet over medium heat. Toss in diced onion and stir until soft, roughly 5 minutes. Add garlic and taco seasoning, then stir for about 30 seconds until you can smell it.
03 - Drop in the ground beef and keep cooking, breaking it apart as you go, until it's totally browned, about 6-8 minutes. Mix in the salsa and keep heating until everything's warmed through. Turn off the heat.
04 - Pop the refried beans in the microwave, heating them for 30 seconds at a time until they're hot.
05 - On each crunchy tostada, spread some of the warmed beans thinly. Add spoonfuls of beef on top, then sprinkle on lettuce, tomato, avocado, cheese, cilantro, and sour cream in any order you like.
06 - Eat the tostadas right away while they're still crisp. Serve extra salsa on the side for dipping.

# Notes:

01 - If beans are too thick, mix in a little water to make spreading easier.
02 - Freshly shredded cheese brings better flavor and texture than store-bought shredded.
03 - To keep tostadas from getting soggy, eat them as soon as they're put together.
